As part of his on-going efforts to create marketable job skills, every day Portland Food Service Coordinator Jamie Hall provides hands-on practical food service projects for the 12 residents in the Portland Kitchen Skills Class. Hall teaches time management, fosters teamwork, stresses the importance of following directions, critical thinking and adapting to constantly changing situations. The class is far from basic cooking skills. For example, on January 23, the class made brine cured alder wood smoked Canadian style Pea meal bacon with sage infused maple syrup, spiced mustard and fried hominy (below).
